Mango and mint lassi
Mango lassi is a traditional Indian summer drink. Adding mint to this five-minute classic cools the body even further.

Ingredients
2 very ripe mangoes, peeled, stoned and diced
10 ice cubes
275ml natural yoghurt
1 lime, juiced
1 tbsp honey
3 tbsp fresh mint, chopped, plus a few sprigs to garnish
Method
1. Put the mango and ice cubes into a liquidiser and blend until smooth.
2. Add the yoghurt, lime juice and honey and blend again.
3. Add the mint and pulse briefly until finely chopped. Pour into glasses and serve immediately.
